If you installed Pages from the Mac App Store since Oct 2013, then you can reinstall Pages v11.1 as the last compatible version for Catalina right from the Mac App Store. No need to fiddle with backup disks.
Launch the Mac App Store and sign-in with the same Apple ID as you used to install Pages before. Then, press cmd+0 (zero) to open the Mac App Store Purchases panel. If Pages is there, you will see some indication that you can download it again. That may be this icon adjacent to the Pages entry:
You may see one or more dialogs, neither of which you click cancel, and the final one will ask if you want to install the last compatible version of Pages for macOS Catalina.
