I got a prescription today that requires me to change the number of tablets each week. I.e. 7 days of one tablet, the next 7 days with 2 tablets and the 3rd week at 3 tablets followed forever by a different tablet. I ought to be able to this. It's a fairly common prescription.

To the best of my knowledge, the ability to automatically change the frequency after a set number of days is not a feature of the Health app currently, nor does it appear to be a feature Apple will add in the upcoming new version of iOS (at least, I can find no such ability). You may need to look for a third-party medication tracker to see if one of them would offer that sort of feature. Otherwise you'll need to make the schedule changes manually.
