Within Apple Music on Mac select Convert -> Create Apple lossless version. When complete the track has a maximum time of 4:44 despite the mp3 tracks being longer. Any ideas?

Weird. Works for me as expected.
But there are similar reports and one user got this fixed by re-creating Music preferences. So try this:
Quit Music. Backup (just in case).
Hold down Option+Command keys as you launch Music which resets its preferences.
If that does not fix it, then:
Press Option key and choose Finder > Go > Library, then open Preferences folder and move the following files to the Desktop (just in case you want to put them back):
~/Library/Preferences/com.apple.Music.eq.plist
~/Library/Preferences/com.apple.Music.plist

Yes, I realize that. The reason why I do it is to avoid the endless "Determining Gapless Playback Information" every time the Music app loads and does whatever it claims it's doing - which if anything, if not persistent. I am not concerned about the file size.

Can’t comment on conversion problem, but Why do want to convert mp3 files to Apple Lossless? You will not get any improvement in sound quality, all you will be getting is larger files!
