That is not a feature of the built-in keyboard. To get the numbers, you tap on the key that has "123" on it. However, you're not restricted to the built-in keyboard. There are lots of others that are available in the App Store. I'm sure you'll be able to find one that suits you.

No availability of ringtones that are not based on songs and are extremely quiet (I work in a loud environment and need something louder than a quiet 'ding').

There are lots of ringtones that aren't songs. Go to Settings>Sounds & Haptics>Ringtone and go all the way down to "Classic." I recommend the "Old Phone" if you have trouble hearing the musical ones.

Inability to set camera resolution (Need to set to highest resolution, and lock the setting so that I can later crop/edit pictures without losing picture quality).

The camera automatically takes photos at the highest resolution.

How to forward text messages?- no option.

The fact that you don't know how to access a feature doesn't mean it doesn't exist. Press and hold on the message you want to forward. On the pop-up menu, select "More". Then, tap the arrow in the lower right corner of the next screen.

How to upload/download pictures to/from phone? Plugged the phone in my computer and pretty much got a blank screen with no folder options, or options to create new folders. How to upload videos to phone from computer?

What kind of computer? Mac? Or Windows?

Did your employer give it to you? I'm wondering if it had some kind of MDM ("Mobile Device Management") installed before you got it.

I could severely limit the kinds of apps and activities you can use it for, especially if they're not strictly work-related, and give it a higher-than-usual level of security.

I'm not sure how you could determine if there is MDM installed on your phone. Probably buried in one of the Settings, and protected by a different passcode than the one you uses to wake up your phone. Ask the person who gave it to you.

Every thing you say you can’t do can be done. Start reading the iPhone User Guide. But to be honest I question your entire post. You sound like an Android user trying to denigrate and dismiss the iPhone by claiming it doesn’t have the features you mention.So are you for real or just a troll? Did you read the article I linked to? I'm guessing maybe not as you also didn't see the link I gave to the user guide. I should know better than to put too many things in one post! ;-)

iTunes is never mentioned.

And of course your employer will know when you turn off tracking if it’s a managed phone. I worked for a mega telecom and if you turned off GPS you were called in to explain. Sometimes people ere suspended for it.
