When pinging phone, a light does not flash on iphone
Is my watch too old to make my phone flash while being pinged? Does this work on my SE1? I tried doing what it told me, it only pinged the phone, the phone did not flash.

That was mentioned in the instructions you posted above. Perhaps go into a dark room and test?
Two other details that might help for locating a misplaced iPhone, you can call out to Siri (when “Hey Siri” is enabled, and more info) with (for instance) Hey Siri, find my phone” or such. No Watch and no other tools are needed.
If having optical clues in addition to the default auditory or haptics / vibration might help, consider enabling the LED for notifications:

I don't believe that for a second!
While I use my watch to find my phone (how does it get under, not just between, the sofa cushions?), making it flash wouldn't be very helpful to me.
