Adding new lab results to Apple Health.
I went and had a cholesterol test run and cannot add the HDL, LDL, Triglerides, etc. data to the Health app. It asks for the lab, but the lab isn't listed. How inane is this?

I suspect the answer depends somewhat on where you are.
At least in the US there are numerous rules and laws about patient privacy and making things like test results available in electronic form.
Apple have worked with a number of labs to qualify their processes to integrate into Apple Health, but by no means all of them.
Given the lack of detail available, I'd assume that the lab you're working with is not integrated with Apple Health, and therefore there's no (easy) way to integrate your data. The list you see is only going to show ones that have gone through the process of onboarding with Apple Health.
The fault lies somewhere between Apple and the health care provider.
