I cannot pair my Apple Watch to my iPhone

If in fact you have an iPhone 8+ as your profile suggests, you have a problem.

watchOS 10, which has been current for nearly a year, requires iOS 17 or greater to pair to your iPhone. The iPhone 8+ cannot support iOS 17 - the iPhone is too old.
