How can I transfer my data from a flip phone to an iPhone?

I want to replace my flip phone with a new Apple phone, keeping the old number and transferring the data. I assume my flip phone is locked. I also want to get a new carrier for my iPhone. How can I do these things?

flip phone is a bit vague

some manufacturers had programs for computers to import and xport contacts and the likes which could then be synced with icloud and to the iphone

if the phone is older then you may need a new sim card from your carrier newer iphones all use nano sim cards

or eSim

maybe read Learn which size SIM your iPhone or iPad uses - Apple Support

the phone number is tied to the sim card so if one use the old one then one keep the number, if one wish to change carrier the old carrier needs to transfer the phone number to the new carrier
