What happened when I used "Stop using Apple ID" on an game(app)?

I signed into a game with my Apple ID and shared with them a "Hide my email" address. Because I couldn't delete the account in-game at the time(due to storage reasons), I considered that the best option would be to just "stop using Apple ID" in my Apple account settings instead.


Now I'm concerned because when I went to sign in again with Apple ID last month (after re-downloading it), the game made a new user/account.


I then went to delete the account within the game right after (because this time I had more storage). This time I know I commenced the deletion process, and it should've been deleted by now (since the 30 days to reactive period is over).


My only question is, what happened to the data now that I've used "stop using apple id" the first time and now the second time? Do they still have the "Hide my email"? Does the company keep the data if I stop using my apple id with them?


I still don't know/remember if the first account was ever deleted, so I'm concerned what info they could have.


Sorry if this was confusing but I really need help because I can't find the answers to my issue anywhere online.


(The game is Honkai Star Rail btw)
