Where do I find my phone number on my iPhone 8Plus?
I am checking security but cannot find information about my phone; i.e., name or number

The number is assigned by your carrier. If supported by them, it should appear in Settings ➜ Phone ➜ My Number.
What name exactly are you looking for? The iPhone's display name would be found in Settings ➜ General ➜ About ➜ Name.
Your name for Caller ID is controlled by your carrier, some some may allow it to be turned or off in Settings ➜ Phone ➜ Show my Caller ID.
To change the name that appears for people who don't have your number in their contacts list, you would need to contact your service provider.
