I’m changing phone companies and they provide a new SIM card. I was advised to transfer any data such as photos onto the phone before I activate the new card. How do I see what is on the old SIM card to ensure I don’t lose information? I’m in Australia and have an iPhone 12. I don’t use the Cloud.

As you are using an iPhone, none of your data is stored on the SIM card. You can change SIM card without any worry. All your data will stay on your iPhone.

As others have correctly mentioned, iPhone does not write anything onto the SIM.
Also make sure the iPhone is not carrier locked before you swap your SIM:

iPhones don’t store any data on the SIM card.
