My friend and I both purchased iPhone 15 pros in the uk one from o2 and one from Tesco mobile when we looked at the model numbers they both had the code for Germany, Belgium, Luxembourg, Netherlands, Austria, France, Switzerland, Monaco is this something we should be concerned about or not

No, it is unimportant. In Settings > General > About, check the model number. It should say A3102 (Tap the Model Number field if it shows a model number beginning by "M".)
