Trying to upgrade from High Sierra 10.13.6 to newer OS
My 27" , mid 2011 OS has High Sierra 10.13.6. I need to upgrade, but is apparently impossible. What are my options? Do I need to just remove HS and then what?

A mid 2011 27" iMac cannot update beyond macOS High Sierra. Removing High Sierra is not going to change this.
It lacks the hardware, RAM and CPU to run any newer macOS version.
Your only real option is to get a newer computer, if you need to run a newer macOS version.

RAM would not be the issue preventing an iMac (27-inch, Mid 2011) from updating beyond High Sierra.
That machine can take an official maximum of 16 GB of RAM, and an actual maximum of 32 GB of RAM. Many of the entry-level Apple Silicon Macs that Apple sells today have only 8 GB of RAM and that is non-upgradable.
It is the other hardware components that are holding the machine back.
