I gave my old iPhone 10 to my granddaughter. She was using a really old iPad with stereo headphones with a 1/8 round plug. What kind of adapter do the headphones need to get to hook to the iPhone 10?

You'll need an adapter as newer phones do not have a headphone jack.
Or, you could take the cheaper route and buy new headphones:
