How can I reset my Apple Watch without my old iPhone?

My iPhone 15 plus was stolen several months ago and don't remember my apple id & password to where I can go in to reset to be able to use my new apple watch I had connected to that phone! What can I do in order to get my watch connected to the new phone At&t sent me?
