See description. This is irrespective of the microphone in use (AirPods Pro or connected AirPods to mini jack with in-line mic). The microphones will work if I check the input selection under Audio and watch the meter, but Siri and Dictation both ignore it.

There are two places to check:
In my case, I had the correct device in Sound selected however not the same under Keyboard settings.
