Since my most recent update, when I forward or reply to a Mail email, the original email is deleted from my inbox. This means losing all attachments to the original message stream, unless I have saved them separately.

What email provider are you using?
The Mail app groups messages together. Try selecting the forwarded message and just scroll down to your original message.
I'm using Mac Mail Version 16.0 (3696.120.41.1.10).
As you say, the Mail app groups messages together. That's fine. But until very recently, if I replied or forwarded a message, through Sent, the original message, with its attachments, remained in my Inbox.
I can do what you suggest but it doesn't help. I can see the original message, but not the original attachments. They are now purely listed as [filename.docx], but the contents are not openable.
