IOS 17.5.1 worked fine with the hands free of my car. IOS 17.6.1 does not work.
My backup has been overwritten (I didn’t detect the problem fast enough).
is there any way of downgrading iOS version?

Sorry but no. Apple stops signing earlier versions of iOS 17, so they can no longer be installed (your backup would not have backed up the OS, just your data). Perhaps if you detail the problems you're having, someone can help you sort them out with your current version of iOS.
