You don't need access to your old email to change your Apple ID. See instructions in Change your Apple ID - Apple Support
including the following excerpt:
If you no longer use the email address that's associated with your Apple ID, or you no longer have access to it, you can change it. You won’t lose access to your contacts, purchases, or other account information.
