How can I uninstall the latest MacOS update Sequoia and go back to Sonoma?
Since the latest updates have issues. Does anyone know how to revert to the latest update and go back to the Sonoma OS?

I didn’t have any issues.
To revert to a previous macOS you must erase the drive and reinstall the previous version. It is best done from
a bootable usb installer.

You're welcome. The only hubs I have are a 7-port USB-A hub connected to an M3 iMac through an Apple Multiport Adapter and have no issues with it. I have another Apple Multiport Adapter connected to an M1 MacBook Air, again, no issues. Last but not least, I have an iMac Pro which means I can plug flash drives directly. Again, no issues.

I use an Avira (I think--currently on the road and it is at home) to connect USB-A hard drives on my M1 Mini, and on my MacBook Pro (M2) I use a Hyper Drive hub. No issues with either.
The Mini Hub is always connected and the Hyper Drive on my MBP I hardly ever use, but have been today to connect a USB-A Smartcard reader.
I have connected a multi-card reader to the M2 MBP with a USB-C to A adapter without issue, but I mostly only need the built-in SD card reader, so full testing of Sequoia with that reader is minimal at best.
My Mac has been trying to update this since last night. If I erase it what do I actually lose from my Mac? The only thing I use it for is email, photos, internet and I don’t run any specific programmes? Thanks
You would lose whatever is stored only on your Mac.
If you use an IMAP email account, you will not lose them. If you use POP, then you would lose all of your email.
If you mean "Photos," then if you use iCloud Photos, you won't lose them. If you have not enabled iCloud Photos, then you will lose all of your photos.

It's pretty simple. Just plug in a drive and it will ask if you want to use it as a Time Machine backup. That's it. You would have had a backup.
I concur with Barney. I've had no issues and have Sequoia installed on three Macs.

Would I lose my Pages documents etc?
If they are only stored on your Mac, then yes you would lose them.
You would lose anything stored on your Mac and not in some sort of cloud or a backup.
