There is unfortunately no way to change the pickup time. You can try contacting Apple Sales Support at 1 (800) 692-7753. They will most likely tell you that you have to cancel the order then place it again. This actually happened to me, I ordered my self a device and one for my family and mine got Apple Pickup and theirs went to a different store and I could not change it. Remember, the store will generally hold the device for 3-5 days which you could then pick it up. Go to Viewing & Changing Orders - Shopping Help - Apple and see when the last pickup day is. As far as "Check In time" it is not a guaranteed time you will pickup your device, this is just implemented to help get the lines moving quicker.
