I read through the iPhone Mirroring info and saw that it said it wasn't compatible with older Macs without the Apple T2 security chip, but the iPhone Mirroring app is in my dock. When I click on it, it looks like it's functioning, but it quickly says "Unable to Connect to iPhone". Why would it be there if it doesn't work at all? Is there any workaround to get it working?

Same here. I have an iMac 5K, 27-inch, 2019 and the app is in the dock as well but connection not possible after entering the requested passcode on the iPhone. Doesn't make sense to have the app installed on a Mac which doesn't fit the requirements at all.
Right? Plus I feel like Apple never does that. It does give me hope that it could work though. I would love to have this work on my slightly aged iMac.
Yes absolutely! Apple makes you feel like you're doing something wrong, even though they won't let it work for you.
