I'm not clear on what you mean. If you're referring to the "Hide My Email" feature of iCloud+, you don't turn it off as such. It's not some blanket feature that applies everywhere. It just creates one-off "alias" emails that you can give to someone you don't want to have your permanent email address. Any email sent to that address gets received in your normal email account. If you no longer want to use that feature, just don't give the email addresses it generated to anyone else and don't use it to create new ones.

There's no folder. From the instructions in that article, it says:
Turn off AutoFill for your contact or credit card information:
Go to Settings > Safari > AutoFill, then turn off either option.

Go to app library swipe all the way down to the bottom it’ll be a folder hidden click the folder then you’re hidden apps will show over there click and hold an app and I’ll give you an option to unhide it then it’s gonna pop up higher up in your app library just click and drag it to the main screen
When I use autofill for email address, “hide my email” is displayed rather than my email address
