I know I have been able to clear or reset saved colors in the palette window (see attached image for reference) before by simply selecting the little square and striking the delete key but not having luck this time.
Would anyone know how to do that?

You should be using the updated Pages v14.2 from the Mac App Store with Sequoia instead of the outdated Pages v13.1 which was meant for macOS Monterey. See the answer by picas for the solution to clearing individual colors.
