Because a new one, probably plastic bodied, is expected soon. Even from Apple mine was £219 compared to £249 earlier.

The Apple Watch Series 3 was discontinued 2022, whatever you buy, you should get an Apple Watch that is still supported.

I would recommend 2nd Generation, as it’s current and affordable in the lineup of Watches. In AU, it starts at A$399.
You can of course shop around. Apple rarely if ever discounts current models, but authorized dealers can be different and may discount from time to time, particularly around holiday sales pushes. You can also look at getting a refurbished model from Apple:

They sometimes have current models, and all come with their full one-year warranty.
