I have a Macbook Air M2 with a docking station. I have one monitor setup with HDMI and I just purchased another monitor to setup. However, when I plug it into the other HDMI port, it is not picking up a signal. Can someone advise on how to have both monitors working and not just one? Thanks!

The only ‘workarounds’ involve docks that use DisplayLink drivers (and generally provide a poor experience).

There are some docks and adapters that use 'workaround' technologies from other "arms suppliers" … but you have the right idea.
From what I've seen, the Synaptics site – Synaptics being the company that provides DisplayLink chip sets and drivers – is organized much better than the sites of some of their competitors. You can find drivers and support articles right away, which is more than I can say for one of the other sites I've visited.
