For the last few days my stages in sleep app, has this weird new color or lack of definite color as shown circled in image. Can anyone tell me what that means and how to get it back to tracking stages?

This looks like the watch could not record sleep data during this time, for some unknown reason.
Did you try to force restart by pressing and holding the Digital Crown and the Side button together for about 10sec, until the Apple logo comes back again?
There’s nothing to solve… That’s “nap detection”.

I saw another user having the similar image block in his sleep history, so this must be watchOS/iOS related.
You should also let Apple know about this issue by using the Feedback link:
My watch detected a nap while I was reading the newspaper this morning for 15min.
Looking at my heart rate during this time, it seems to be, that not moving and having a heart rate higher than the resting heart rate, will trigger the recording of a nap, instead of being awake and moving, or sleeping, showing a lower heart rate.
I did and I still got same results today. This has been happening since updates iOS18 iPhone and iOS11 watch. I even tried deleting schedule on both devices, restarting both then adding sleep schedule back.
Not sure people who think not is napping is true.
This comes up during my sleep focus. In middle of nightly sleep. As the OP showed in his screen shot.

But I too have had it happen with frequency.
oddly it never comes up when I occasionally nap.

I have the same thing and it is confusing. If it is nap mode it means I’m napping in the middle of the night? Should be some “type “ of sleep or awake, correct?
same thing here tonight. I have had my watch since a week and everything is updated. Been sleeping with it since i got it but tonight it acted up 🤷🏼♀️
