For the last few days my stages in sleep app, has this weird new color or lack of definite color as shown circled in image. Can anyone tell me what that means and how to get it back to tracking stages?

This looks like the watch could not record sleep data during this time, for some unknown reason.
Did you try to force restart by pressing and holding the Digital Crown and the Side button together for about 10sec, until the Apple logo comes back again?
Then you should report this directly to Apple, using the Feedback link, as this is the only way to reach them.

I saw another user having the similar image block in his sleep history, so this must be watchOS/iOS related.

I did and I still got same results today. This has been happening since updates iOS18 iPhone and iOS11 watch. I even tried deleting schedule on both devices, restarting both then adding sleep schedule back.
Very frustrating. Any solutions?
