Unless you have an Intel Mac and are running some Virtualization software, you can't.
You can just use the tools built into macOS. But, I'm not sure what it is you want to do.

What was known as iTunes on macOS and is still known as iTunes on Windows was reorganized on macOS a while back, and the part of iTunes that was used for restoring a device is part of Finder on macOS.
There is nothing additional to install onto macOS needed.
