Safari security privacy reload page options seem to have changed in v18

Update: I have found the three options in the Safari View menu, my challenge now is the make these changes stick for a specific web site.

Hi, there used to be three options available on a tab in Safari to reload the page with less security settings, I cannot remember what there were exactly but there was reveal IP, without content blockers, I think.....

These options have gone in v18 or have they just moved? How can I make site specific changes?

I have a site that just does not work with my configuration of Safari, the company say it is me and not them.

I looked at the Safari > Settings for website name but they seem quite limited

I do not want to relax security and privacy completely but just make site specific changes.

Any help appreciated.
