You don't. It's taking a picture of exactly what is on your screen when you take the screenshot. And why you can't turn it on or off, no one here can answer. We are ALL just users like you on this user to user only forum. Suffice to say, the bar is part of the UI on iOS and can't be turned off or on.

Does “home bar” mean the dock at the bottom of your screen? If so, it appears in your screenshot because it is on the screen when you take the screenshot.

Because your phone is taking an exact picture of exactly what is on the screen at the time of the screenshot.
