I purchased an apple gift card for a person for whom I have sent cards to before with no issues and now they are saying that they have not received the last one I sent yesterday evening how do I know if they have redeemed it or not

Apple won't give you that information, unless perhaps they are able to establish that it was you that redeemed it.
