At the time I used my iPhone 13 to set up a new iPad Pro 13” I didn’t want to move everything over so I didn’t select iPad and iPhone set up at that time! Now I want to manually add some of the apps to the new iPad now! So how do I go about doing this? Thanks for your help!

Assuming that both your iPhone and new iPad are signed-in with the same AppleID (now also known as your Apple Account), simply download the Apps from the App Store.
All purchased Apps (including Apps that are "free") are forever associated with the AppleID that was used to purchase and download the App - and will be available to download and install on other compatible devices (without additional charges) that are signed-in to the Apple App Store with the same AppleID.
