Why Messages are getting deleted from my Apple Watch and iPhone?

Check Settings -> Apps -> Messages on your iPhone. Is it set to Keep Messages -> Forever? If not, then it will automatically delete messages after 30 days.
If that's not the issue, are you deleting them anywhere else, such as on a Mac or iPad? If so, then the message will be deleted on all your devices, not just one.
If none of that is the issue, post back with more details and someone may be able offer additional suggestions.
