I just want to use color for my words and NOT highlight but when I toggle off the pencil the color goes back to black, if i choose a color for my text it automatically highlights it… any help? Thanks!

The Notes App, to my knowledge does not offer an option to change the color of the text. As you've discovered, you can highlight text in colors. There are loads of Notes Apps you can check out in the App Store, some of which may offer this feature.
