I enabled 'Always on Display' on my iPhone 16 Plus, and now I want to disable it. But to my surprise the setting 'Display & Brightness' -> 'Always on Display' just isn't there!! I can see all the rest of the display settings, but not this one. Being a first time user of iPhone, am I not able to understand why this happened and how to disable it.

That's correct. It is only available on pro models. Sounds like you're just describing the new Lock Screen customization tools. There's no turning that 'on'. It is just there.

There is no "always on display" setting to disable on your phone because that is not a feature of your phone.
have you tried to use the search field in settings to type in always on and see if it's located elsewhere in the settings than you expect?
I've seen some documentation and it seems that this feature is not suported in iPhone 16 plus. Now I'm confused what exactly did I "turn ON" in the first place that started showing various things including some decorative clock screens, pics from my Photos etc on lock screen.

iPhone SE 2 doesn't have an Always on Display. So it makes sense there is no setting to turn it off. Did you go to Settings > Display & Brightness > Auto Lock and change the setting to the desired time you'd like the screen to remain active?
I am having same issue here with iPhone SE2 w/latest updates. My display no longer Auto-locks display at 30sec and ‘Always On display’ setting is missing. It shows up when I search for it, but takes me to ‘Display and Brightness’ screen where the setting is omitted. This just started happening about a week ago. Clearly a bug.

No, you don't have 'the same issue'.
There is no always on display on your phone, true, but auto locking is something completely different.

Yes. Search takes me to same 'Display & Brightness' -> 'Always on Display', and the option is missing there. Here's a screenshot.
