Since the latest update 18.0.1 my Yahoo email has not updated. Settings are not showing the same as before.
What size hammer should I use?

It won't unless your account is set up for POP (in which all messages, both received and sent) are stored only on your device, or unless your Yahoo account is badly messaged up. If your account is IMAP - that is, you can log into your Yahoo account via the web and can see all your received and sent messages there - then they're kept on the Yahoo servers and will, again unless your account is badly amiss, reappear on your iPhone.

Have you tried removing the Yahoo account from Mail and re-adding?
Worried I would loose existing emails.
