I go through my messages on Messages and edit the ones I want to remove, but the ‘Delete’ button is not visible. Instead, the Keyboard is hiding the delete button and I can’t move the keyboard!

You don't need to use your keyboard to delete messages. Open the Message App. Tap Edit, then select messages. A circle will appear next to all your messages and tap the message circle of the messages you want to delete, then tap delete on the lower right hand corner of your screen.
