I have tried all of the suggestions listed online for users with this issue, although most were posted 3+ years ago. i have no problem watching other streaming services full screen; the issue lies solely with Apple TV. Thanks!

Did you turn your phone to a horizontal orientation? That should automatically make it full screen. (Orientation Lock in Control Center may block that feature.)
(If you don’t mind the notch cutout or other side cutoffs from view, then you can pinch-out for a few percent more edge-to-edge with content pixels. This may be an app specific feature, different from other video apps.)
Note that the iPhone 14 screen is not 16:9 precisely (~19.5:9 since Xr/Xs), so even then some letterbox or pillarbox or cutoff will happen, depending on the source material and its aspect ratio.
