How to format an e-mail using native mail app on iPad Pro

I’m running 17.5.1 on an iPad pro. Is there *any* way to do any formatting? The only thing I can find is bold/italic/underline. ?? It’s frustrating to have to always go to Outlook or g-mail to be able to do anything beyond the super basics on an iPad pro e-mail. 

I got a response that shows how to do it, but my screen doesn’t have the same options as the person who responded. I don’t see any of the options in the screenshots below that he sent:
