How to change my Apple ID (email address)

I want to change my email address due to all the data breaches of businesses I've dealt with, but can't find a way to do it. When I log into iTunes, it says go to account.apple.com, however when I click on the link, I get an error message instead, 503 Service Temporarily Unavailable. It's been that way for about 5 days so far.

If anyone has any suggestions, I'd be very happy to receive them!

Have you tried from your device settings instead? Change your Apple Account primary email address - Apple Support
