Your Apple Watch probably uses watchOS 11. In which case you'll need to upgrade your iPhone to iOS 18 (staying on iOS 17 won't work.)
On your iPhone, go to Settings > General > Software Update and tap the banner "iOS 18" to upgrade your device.
