I updated to the 15 Pro Max and gave my husband my 13 Pro Max. His 13 gets all my texts and email. How do I separate our phones?

You didn’t properly sign out and erase the phone so he could set it up with his own information. You need to follow the steps at What to do before you sell, give away, or trade in your iPhone or iPad - Apple Support

So far, it sounds like your phone and your husbands phone are using same Apple ID.
All that you can do is try the following to see if helps with Messages.
On your phone......
Tap Settings
Scroll down and tap on Messages
Tap Send & Receive
Make sure that the only check mark is next to your phone number
On your husbands's phone.....
Tap Settings
Scroll down and tap on Messages
Tap Send & Receive
Make sure that the only check mark is next to your husband's phone number
No guarantees, but worth a try. For the future......Every user needs to have their own Apple ID.
Did you remove the device from your apple account? Sounds like the two devices are syncing through iCloud.
Go to settings on your new phone and click on your name at the top. Scroll down and see what devices you have listed. If it's there, click "remove".

The problem is I don’t want to erase all the phone contacts and other information from my husband’s phone. I just want to stop it from getting my messages.
