I called my girlfriend last night with FaceTime and it didn’t ring but just went to voicemail after like 10 seconds. Then I called straight out and it didn’t ring. Then I called from my TextNow number and it ring then went to Voicemail. So why did it ring from my TextNow number and not when I called from my regular number?

There's no way to know, at least not through Apple's systems and services. If she blocked you on FaceTime, you won't get any sort of notification, nor if she blocked your normal number on an iPhone. What TextNow may or may not report I have no idea.
That's almost certainly an issue on her end of things, not yours, though FaceTime, TextNow and your normal cell service are completely different systems and so what you get when calling through those services may very well differ.
