How can I delete ALL
NON-AMERICAN holidays from my

What do you mean by “non-American”?
If you mean you only want government holidays and no religious holidays at all or something similar, you will have to unsubscribe from the standard holiday calendar and find one that contains the holidays you want.
Use a different calendar. You are not required to use the built in calendar on iPhone.
