Find My is the app that must be used if you want to track your phone. Without turning it on, you don't have a way to do that. The phone is gone, but hopefully you did use a Passcode. This will prevent them from getting any access to your data.

You can't.

The only way to possibly find your phone would be to retrace your stops and ask at any shops or restaurants that you might have visited.
