Is it possible to use aftertouch to switch between different channel strips within a patch? Specifically, I'd like to trigger a timpani hit initially, and then, as I apply aftertouch, switch to a timpani roll. Additionally, the volume of the roll should increase as the pressure from aftertouch intensifies.

Not sure that can be done directly in MainStage. However, MIDIpipe (free to use) will convert aftertouch to CC and is able to pass the data byte from the aftertouch to the CC. You may want to set up an IAC to route the output to and then pick that up in MS and do with it what you want.
