I received an email for something called Payspan saying urgent update Apple information within 48 hours or my apple ID will be locked and it has already been temporary disabled. I’m thinking it’s a scam because I have never heard of them.

Yes, if you have changed your Apple ID password, you should be fine.
Ok because I signed in through the link but I stopped once I got to the part where they asked me for credit card information and stopped what I was doing. I immediately logged out of it and changed my password. So I should be alright after doing that right?
