Text replacement not waiting for space (currently on Sonoma)

I have never used Autocorrect because I'm bilingual and often mix and match languages within a single sentence, which makes it act up in ridiculous ways. So I have a LOT of shortcuts I've manually created over the years on my iPhones to correct frequent typos or write out full expressions from a text shortcut. This works well on my iPhone, but on my Mac, every now and then, I get text replacement before I'm done typing a word. For example, I have "pe" set to change to "peut-être" because that takes forever to type in on a phone, with the dash and the accent on the ê. So then, if I write something that starts with "pe", like "personality", my Mac will replace the text while i'm writing, with the result being "peut-êtrersonality".

My "autocorrect while typing" setting is off; I cannot figure out why my Mac does this and it's extremely annoying because I do NOT want to turn my text replacements off as a whole. I just want it to behave as designed and wait for a SPACE before replacing the text.

How do i fix this?
