After setting the language, how do I access Apple Intelligence on my iPad Pro?

See this and make sure you do have a compatible device and you aren't in a region where Apple Intelligence is not yet released --> How to get Apple Intelligence - Apple Support (CA)
Your tag line suggests you have an iPad Pro. Is your iPad Pro one with the M1 Chip? The first iPad Pro with M1 Chip is a 5th Generation iPad Pro, released in 2021. If your iPad Pro is not that or it is older, Apple Intelligence won't run on an older iPad Pro.
