With the two different profiles on Apple TV can each be logged into their own Netflix account?

I moved in with my boyfriend, and he has an Apple TV. He set up an account for me so I can have my own screening experience when I want to watch my stuff. When he added my account, it's logged into his Netflix. I was wondering—without messing with his accounts—am i able to log out of his Netflix account on MY Apple TV account and log in to my Netflix without interfering with his own Netflix log in? Hopefully this makes sense

No. The Apple Account log in only applies to Apple apps and services, like the Apple TV app, the Music app and Photos. 3rd party apps like Netflix will not be affected by what Apple account is selected and only have one account that can be logged in.

In the case of Netflix, it be much easier, if he just creates a profile for you in the app, that keeps your viewing history separate from his. It would also allow you to cancel your Netflix subscription while you are living with him, so you only pay for one subscription. And, no, you cannot transfer your viewing history though.
